Ice Cream Sandwiches

These ice cream sandwiches can help your child cool off on the hottest days of summer. You may use any food coloring color you choose, so it is perfect for any birthday party or get together.
Ingredients:
1 box of white cake mix
1 egg
¼ C. butter or margarine
2 tsp. water
Wilton sugar cookie crystals
2 C. vanilla ice cream
Food coloring of your choice (this example uses blue)
*Makes about 10 sandwiches (20 cookies total)
Directions:
Pre-heat oven to 350 degrees
Combine cake mix, butter, water and 1 egg and blend well. Let dough set for 20 minutes in the fridge.
Once dough has set, remove from the fridge and make 1-2’ cookies placing them 2’ apart. on a greased baking sheet. Bake 9-11 minutes and let them cool completely.
Remove the ice cream and set aside the 2 cups needed for your ice cream sandwiches. Let it soften at room temperature a bit to make mixing the food coloring easier.
Add 2-3 drops of the food coloring of your choice to the ice cream and mix well.
Place the ice cream back into the freezer to harden.
Once the cookies are cool and the ice cream has hardened place a scoop onto the cookie and smush another cookie on top.
Roll the sides of the sandwich in the edible glitter and repeat with other cookies.
