Fruit Basket Waffles

1 jar (24 oz.) sliced peaches
1 Tbsp. cornstarch
¾ tsp. cinnamon
1 banana, sliced
1 Tbsp. fresh lemon juice
1 cup red or green seedless grapes
8 slices cooked ham (optional)
8 waffles

Drain peaches, reserving 1 cup of the syrup in a small saucepan; set peaches aside. Add cornstarch and cinnamon to syrup; stir to dissolve cornstarch. Cook, stirring constantly, until thickened and translucent. Moisten banana with lemon juice to prevent browning. Combine banana, peaches and grapes with syrup mixture. Place ham slices over waffles. Top with fruit and syrup mixture.


Lasagna Roll-ups
Prep Time: 20 minutes
Cooking Time: 55 Minutes
Servings: 8

8 lasagna noodles
1 lb. Italian sausage, casings removed
1 cup onion, chopped
2 cloves garlic, finely chopped
1 can (18 oz.) tomato paste
1 tsp. oregano leaves, crushed
½ tsp. basil leaves, crushed
1 tub (15 oz.) ricotta cheese
1 pkg. (10 oz.) frozen spinach, chopped, thawed and squeezed dry
1½ cups mozzarella cheese, shredded
1 cup grated Parmesan cheese
1 egg
½ tsp. salt
 
Cook noodles according to package directions; drain. Cook sausage, onion and garlic in large skillet until meat is done; drain. Stir in tomato paste, 2 cups water, oregano and basil. Bring to boil; reduce heat and simmer, covered, 20 minutes.

Combine ricotta cheese, spinach, 1 cup mozzarella cheese, Parmesan cheese, egg and salt. Spread about ½ cup cheese mixture over each noodle; roll up. Place seam side down in 13x19 inch baking dish. Pour sauce over rolls. Sprinkle with remaining mozzarella cheese.

Cover and bake in preheated 350-degree oven, 35 minutes or until cheese is melted.
